There is no doubt that you have heard about the latest health crave vegetable: Kale.

I must admit that I was curious to try it out, so after looking into kale recipe inspirations on Pinterest I decided to make a kale smoothie.

Unfortunately my fist attempt was rather unsuccessful. Indeed, I discovered that kale doesn’t blend that easily. I ended up with a dark green, not so smooth, bitter smoothie. Not what I was hoping for to say the least.

So if like me you don’t own one of those fancy blender such as the nutribullet , here is the one tip which will help you get a fresh and delicious smoothie: freeze your kale first.

My second attempt (with frozen kale this time) was a success, a delicious (bright green, yeah!) smoothie, filled with vitamins and nutriments and all under 150 calories.

I actually can’t believe that I have become one of those girls blogging about healthy recipes and adding the nutritional information to the post. Truth is , after losing 2 stones by eating loads of home-cooked meals, I have grown to love the “healthy living” lifestyle. I guess I had this coming, I am in my 30’s, I am a running/gym geek and now I am also a green stuff kinda girl.

Ingredients:

  • A bag of fresh frozen kale (100g should be enough)
  • 50 ml Alpro coconut/almond milk – add water if needed.
  • 1 small handful of fresh mint
  • 1 teaspoon of honey

Instructions:

1. Take the kale out of the freezer

2. Put the kale in your blender

3. Add the coconut/almond milk, the mint and one teaspoon of honey.

5. Blend.

6. Voila! A beautiful and tasty glass of kale!

Serving size: 1 smoothie,  Calories: 115, Fat: 1g , Carbohydrates: 26g, Sugar: 18g, Fiber: 2g, Protein: 2g.
